The loss of wine in a wine bottle, also known as ullage, causes an airspace which has an adverse effect on wine. Different countries and companies have different views on how much airspace should be left when bottling, the French normally leave 5mm, the Australian tend to use methods where there is a space but their methods leave that space not filled oxygen and large companies will rarely fill above the 750 millilitres that is statutorily required.
